My Old Life
I remember when fast food chains, pizza deliveries, sodas, candy and buffets were part of my life. Then came mold. After my major exposure, I just couldn't handle the quick convenience of foods that were full of white sugar and white flour. Monosodium Glutamate (MSG), food colors and dyes were also out. It was years before I discovered that I couldn't tolerate products with citric acid, peanut butter, moldy grains and mold that was in coffee and chocolate.
I was encouraged to change my eating style and no one told me I could never eat fast food again. My body and brain knew that what I needed to heal was real, whole foods. I learned about fermented foods and found that beet kvass was amazing in taking away sugar cravings. I discovered high altitude coffee and chocolate products and the gifts of pastured eggs and grass fed beef and buffalo. Although I do have chicken and pork on occasion, I do my best to get them from very reputable sources that do not use genetically modified organisms (gmos) in their grains for the animals. I also do my best to ensure that the grains fed are not moldy.
As I have mentioned previously, I have absolutely no desire to consume products from feedlots with deplorable conditions for the animals. I also have chosen to avoid products with soy and oils that are not a good fit for me which include: corn, soybean, cottonseed, canola and vegetable. I love fresh, homemade juice and I do my best to include organic, non-gmo vegetables and fruits. Granny Smith apples and lemons are two of my favorites!
In my life even overwhelming times have given me tremendous gifts. My exposures to mold have led me to falling in love with cooking. I love learning about cultures around the world and have enjoyed learning to create foods from many different regions of the world.
I have a genetic profile that is quite interesting and I happen to be one of the minority of people who are quite reactive to mold. My sensitivity has led me to discover all types of food that I would not have normally tried in my old life. In addition, I now realize how grateful I am to be eating food that supports my health. In a way as powerful a punch as mold has had, it brought me to making health affirming changes in my life and for that I will always be grateful!
